Makes 12 balls Every ingredient in these incredible treats provides a big boost of energy, and they are perfect when you need an extra boost to get everything done. The best part of enjoying them is that you won’t experience a blood sugar spike because the base is fiber-rich oats. Your blood sugar levels will stay stable all day, especially if you include high-fiber foods in your other meals. To make this dish gluten-free, you can use gluten-free rolled oats.
PREP: 10 minutes, plus 30 minutes chilling time
COOK: none
2 cups rolled oats
½ cup sunflower seeds
¼ cup almond butter
¼ cup dried blueberries
2 tablespoons raw honey
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1.In a large bowl, stir together all the ingredients.
2.Roll the mixture into 1-inch balls and place them in a parchment paper–lined container.
3.Refrigerate the balls for about 30 minutes, until they become firm.
4.Keep covered and refrigerated for up to 1 week, or freeze for up to 1 month.
